World Pizza Day and Super Bowl Sunday: Celebrate with Two Simple, Healthy Plant-Based Pizzas

Today, February 9th, is World Pizza Day, a day dedicated to celebrating one of the most beloved foods around the world. Did you know that this global day of pizza appreciation first started in Italy and is now widely recognized in the U.S. as National Pizza Day? And this year, it’s even more exciting because it falls on Super Bowl Sunday—a perfect excuse to indulge in a delicious, homemade pizza while cheering for your favorite team!
Pizza doesn’t have to be unhealthy or loaded with processed ingredients. You can create a nutritious, flavorful, and satisfying plant-based pizza right at home. Below, I’m sharing two simple versions of a plant-based pizza—one totally vegan and the other featuring goat cheese for a bit of creamy indulgence.

Recipe 1: Simple Vegan Veggie Pizza
(No dairy, 100% plant-based, loaded with nutrients)
Ingredients:
1 whole-grain or cauliflower pizza crust (for fiber and gut health)
½ cup tomato sauce (rich in lycopene, an antioxidant that supports heart health)
½ cup cherry tomatoes, sliced (vitamin C boost for immune support)
½ cup mushrooms, sliced (great for gut health and immune function)
¼ cup red onions, thinly sliced (anti-inflammatory benefits)
½ cup fresh spinach or arugula (high in iron and folate for energy)
1 tbsp olive oil (healthy fats for brain function)
1 tsp dried oregano and basil (natural antioxidants)
¼ tsp crushed red pepper (metabolism booster)
2 tbsp nutritional yeast (adds cheesy flavor + provides B12 for energy)
Instructions:
Preheat your oven to 400°F (200°C).
Spread the tomato sauce evenly over the crust.
Layer with cherry tomatoes, mushrooms, onions, and spinach.
Drizzle olive oil on top and sprinkle with oregano, basil, red pepper, and nutritional yeast.
Bake for 12-15 minutes or until the crust is crispy and the toppings are cooked.
Let cool slightly, slice, and enjoy!

Whole-grain or cauliflower crust: Provides fiber to aid digestion and balance blood sugar.
Tomatoes & spinach: Packed with vitamins and antioxidants for heart and immune health.

Ingredients:
1 whole-grain or cauliflower pizza crust
½ cup tomato sauce
½ cup cherry tomatoes, sliced
