Wholesome Cookie Delights: Oatmeal Carob and Super Food Crunch Cookie Recipes

Hello everyone! October is not only National Dessert Month, but it's also National Cookie Month. Since the holiday season is just getting started, I'll be sharing a lot of new cookie favorites and some of my all-time favorite cookie recipes from the Raw-Riffic Food blog archives. Here at Plant Based Flex, it's all about healthy sweet treats. Today, I'm excited to share two fantastic cookie recipes from the archives, both packed with wholesome ingredients and delightful flavors.


These delightful cookies are not only a delicious treat but also packed with healthy benefits from their nutritious ingredients. For example, the oatmeal in the Oatmeal Carob Cookies provides fiber and sustained energy, while the Super Food Crunch Cookies are loaded with almonds, goji berries, and raw cacao nibs, offering antioxidants and essential nutrients.


Oatmeal Carob Cookies Recipe:

Ingredients:

  • 1 cup raw oats

  • 3 tablespoons raw oats (reserved)

  • 1 cup raw hazelnuts

  • ¼ cup raw carob powder

  • 1 tablespoon mesquite powder

  • ½ teaspoon pink Himalayan salt

  • ½ teaspoon ground cinnamon

  • ½ teaspoon non-alcoholic organic vanilla extract

  • ¾ cup well-packed pitted dates

  • 1 tablespoon agave nectar

Preparation:

  1. Using a food processor, combine 1 cup of raw oats with the hazelnuts, carob powder, mesquite powder, salt, and cinnamon. Mix well.

  2. Add the pitted dates and vanilla. Continue mixing until the mixture becomes crumbly and sticky.

  3. Slowly drizzle in the agave nectar while the food processor is running. Stop when the mixture resembles cookie dough.

  4. You can shape this dough into round balls or flatten each piece to create traditional cookie shapes. Alternatively, roll out the dough and use cookie cutters to make fun shapes.

  5. While these cookies don't require refrigeration, it's a good idea during hot summer months to prevent them from becoming too soft. Enjoy these amazing cookies – they tend to disappear quickly!

  • ½ cup raw almond butter

  • 2 ½ tablespoons agave nectar

  • 2 tablespoons non-alcoholic organic vanilla extract

  • 2 cups raw almond meal

  • ½ teaspoon pink Himalayan salt

  • ¼ cup sliced raw almonds

  • ¼ cup goji berries

  • ¼ cup raw cacao nibs

  • 1 tablespoon shredded dried coconut

Preparation:

  1. Combine almond butter, vanilla, salt, and almond meal in a food processor. Mix until well combined.

  2. Add the remaining ingredients and blend until a dough forms.

  3. Remove the dough from the processor and shape it into balls or flatten it to create round cookie shapes. You can also use cookie cutters for various shapes.

  4. These cookies store best in the refrigerator, although it's not necessary. For a crispier texture, you can even dry them slightly in a food dehydrator.

Super Food Crunch Cookies (Per Serving, assuming 12 servings):
  • Calories: 190

  • Total Fat: 14g
