  • 1/2 Tbsp miso paste

  • 1/2 Tbsp cumin

  • Sea salt, to taste

  • 1/2 cup purified water (adjust as needed)

For the Raw "Tortillas":

  • 4 to 6 large collard green leaves (or romaine lettuce, chard, or dinosaur kale)

Preparation:

Raw "Re-fried Beans":

  1. In a food processor, grind the Brazil nuts until they resemble a powdery texture.

  2. Add agave nectar, miso paste, cumin, chili powder, chipotle powder, red pepper flakes, and a pinch of sea salt to the ground nuts.

  3. Process the mixture until all the ingredients are well combined.

  4. Gradually add purified water to the mixture, processing as needed to achieve a creamy and bean-like consistency. Adjust the water quantity to reach the desired texture.

  5. Taste and adjust the seasoning if necessary. Set aside.

Raw "Tortillas":

  1. Carefully remove the stems from the collard green leaves to make them more pliable.

  2. Place spoonfuls of the prepared "re-fried beans" onto the center of each collard green leaf.

  3. Add any desired raw toppings, such as tomatoes, avocado, or sauces.

  4. Gently roll up the collard green leaf, tucking in the sides as you go, to form a burrito shape.

  5. Secure the burrito with a toothpick or by tucking the leaves underneath.
