Recipe 1: Figgie Rawtons

Outside Cookie Base:


Ingredients:

  • 1/3 to 1/2 cup raw Brazil nuts

  • 1/2 cup raw cashews

  • 1 cup raw walnuts

  • 1/4 cup raw almond flour

  • Dash of pink Himalayan salt

  • 1 cup pitted Medjool dates

  • 1/2 cup pitted California dates (any variety of date will do)

Preparation:

  1. In a food processor, combine raw Brazil nuts, raw cashews, raw walnuts, and a dash of pink Himalayan salt. Pulse until the nuts are finely ground.

  2. Add raw almond flour and mix well.

  3. Add pitted Medjool dates and pitted California dates. Process until the mixture becomes crumbly and holds together.

  4. Spread the dough over parchment paper and use a rolling pin to flatten it into an even, slightly thick rectangular shape. Set aside.

Figgie Filling:


Ingredients:

  • 2 cups dried figs

  • 1/2 cup pitted California dates (or any variety)

  • Dash of ground cinnamon

  • Dash of ground ginger

Preparation:

  1. Combine dried figs, pitted dates, ground cinnamon, and ground ginger in a food processor.

  2. Pulse the ingredients until they are thoroughly combined and have a gooey texture.

Assembly/Preparation:

  1. Spread the Figgie filling over half of the rolled-out cookie dough, covering only one side.

  2. Fold the other side of the dough over the filling to form a large square-like sandwich. Gently press down.

  3. Trim off any uneven edges and carefully slice the sandwich into small squares.

  4. Place the squares in the refrigerator to chill for about 1 hour.

  5. Just before serving, dust the tops and bottoms of the cookies with lucuma powder.

  6. Enjoy these delicious Figgie Rawtons!

  • 1 cup coconut flour

  • 1/4 cup Lucuma powder

  • 1 teaspoon Himalayan pink salt

  • 1/2 teaspoon ground cinnamon

  • 1 teaspoon non-alcoholic vanilla extract

  • 1/4 cup raw agave nectar (use up to 1/3 cup if needed)

  • 1 cup pitted Medjool dates (about 20-25 dates)

Preparation:

  1. In a food processor, combine raw almond meal, coconut flour, Lucuma powder, Himalayan pink salt, and ground cinnamon. Process to mix.

  2. Add non-alcoholic vanilla extract and raw agave nectar. Process until well combined.

  3. Add pitted Medjool dates and process until a dough forms.

  4. Divide the dough into two equal parts and roll each part into a dough ball.

  5. Roll out each dough ball into a square shape using a rolling pin. Add almond meal if needed to achieve desired consistency.

Fig Paste Filling:


Ingredients:

  • 2 lbs freshly picked figs (stemmed)

  • 1 tablespoon raw honey

  • 1 teaspoon ground cinnamon

  • 1 teaspoon Himalayan pink salt

  • 1/2 teaspoon ground ginger

  • 1 teaspoon non-alcoholic vanilla extract

  • 1 tablespoon cold-pressed coconut oil

  • 1/4 cup chia seeds (use up to 1/3 cup if needed)

Preparation:

  1. Wash fresh figs and place them in a food processor. Process until the figs are broken down.

  2. Add raw honey, ground cinnamon, Himalayan pink salt, ground ginger, and non-alcoholic vanilla extract. Process until well combined.

  3. Add cold-pressed coconut oil and process until mixed.

  4. Transfer the fig mixture to a mixing bowl and fold in chia seeds.

Assembling the Fig Squares:

  1. If dehydrating, place one dough square on a dehydrator sheet on a tray. Spread the fig paste mixture over the dough square.

  2. Place the other dough square over the fig mixture to create a sandwich.

  3. Score into bite-size squares using a sharp, clean knife.

  4. Dehydrate for about 2 hours, then flip over and dehydrate for an additional 2 hours. Break apart squares and serve.
