As we welcome the approach of Fall, I'm happy to be diving right back into sharing some beloved pumpkin recipes. With the official pumpkin spice season having kicked off on August 24th, this week marks the perfect time to embrace all things pumpkin and usher in the autumnal vibes we adore.


To celebrate this delightful season, I've crafted a recipe that embodies the essence of fall – Homemade Pumpkin Donuts. Imagine sinking your teeth into the perfect blend of pumpkin and spices, all wrapped up in a delectable donut. 🧁🍂 Homemade Pumpkin Donuts Recipe: 🍂🧁

Wet Ingredients:

  • 3 organic brown eggs

  • ½ cup coconut oil

  • ½ cup almond milk

  • 2 each 15-oz. can pumpkin puree (approx. 3 cups fresh cooked)

  • ½ T organic, non-alcoholic vanilla extract

  • 1 cup organic sugar

  • 1 cup coconut sugar

Dry Ingredients:

  • 3 ½ cups organic all-purpose baking flour

  • 2 tsp baking soda

  • 2 tsp baking powder

  • 1 ½ tsp Pink Himalayan salt

  • 2 ¼ tsp pumpkin pie spice mix

Directions:

  1. In a large bowl, whisk the eggs until frothy. Incorporate the coconut oil, almond milk, pumpkin puree, and vanilla extract. Stir until the mixture is smooth.

  2. Add both organic sugar and coconut sugar to the wet ingredients, mixing thoroughly.

  3. In a separate bowl, combine all dry ingredients and blend well.

  4. Gradually incorporate the dry ingredients into the wet mixture, stirring continuously to ensure a smooth, lump-free batter. The consistency should resemble that of thick pudding.

  5. Grease donut pans with coconut oil. Fill each cavity ¾ full with the batter. Alternatively, use a lined mini muffin tin if donut pans are unavailable.

  6. Bake in a preheated 350°F oven for 15-18 minutes for donuts (or 23-25 minutes for muffins). Perform the toothpick test to determine doneness.

  7. Once cooked, remove from the oven and allow to cool for approximately 5 minutes. Transfer the donuts (or muffins) to a cooling rack to further cool.

  8. Create a delightful cinnamon sugar coating by combining sugar, cinnamon, and optional pumpkin pie spice mix in a large zip lock bag. Add a few donuts at a time to the bag and shake vigorously to coat them in the sugary goodness. Place them on plates to allow the sugar to set.
