🌱 Raw Vegan "Mock" Chicken Meat Recipe 🌱
Ingredients:
1 cup raw sunflower seeds, soaked for 4-6 hours and drained
1/2 cup raw walnuts, soaked for 4-6 hours and drained
1/4 cup nutritional yeast
2 tablespoons lemon juice
2 tablespoons tamari or soy sauce
1 tablespoon apple cider vinegar
1 teaspoon poultry seasoning (a blend of sage, thyme, rosemary, and marjoram)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
1/4 cup water
1 tablespoon ground flaxseeds
Instructions:
Blend soaked sunflower seeds, walnuts, nutritional yeast, lemon juice, tamari, apple cider vinegar, poultry seasoning, garlic powder, onion powder, salt, and pepper in a food processor until coarsely textured.
Mix ground flaxseeds and water to make a flax egg. Let it thicken for a few minutes.
Add the flax egg to the mixture and blend again until dough-like.
Taste and adjust seasonings as desired.
Shape mock chicken meat and place on a dehydrator tray lined with non-stick sheet. Dehydrate at 115°F (46°C) for 6-8 hours.
Use immediately or store in the refrigerator for up to a week.
