For the Salad:
1 cup quinoa, rinsed
2 cups water
1 cup pomegranate seeds
1/3 cup pistachios, shelled and roughly chopped
1/4 cup fresh parsley, chopped
1/4 cup fresh mint, chopped
1/4 cup fresh cilantro, chopped (optional)
1/4 cup red onion, finely diced
1/2 cup cucumber, diced
1/4 cup crumbled feta cheese (optional for non-vegan)
For the Dressing:
3 tbsp olive oil
Juice of 1 large lemon
Zest of 1 lemon
1 tbsp maple syrup or honey
1 clove garlic, minced
1/2 tsp salt
1/4 tsp black pepper
Instructions
Cook the Quinoa
Rinse the quinoa thoroughly under cold water to remove bitterness. Bring 2 cups of water to a boil, add the quinoa, reduce heat to low, and cover. Simmer for 15 minutes or until the water is absorbed. Fluff with a fork and allow to cool.
Prepare the Dressing
In a small bowl, whisk together olive oil, lemon juice, lemon zest, maple syrup, garlic, salt, and pepper. Taste and adjust seasonings as needed.
Assemble the Salad
In a large mixing bowl, combine the cooked quinoa, pomegranate seeds, pistachios, parsley, mint, cilantro (if using), red onion, and cucumber. Pour the dressing over the salad and toss gently to coat evenly.
Optional Finishing Touch
For a touch of creaminess, sprinkle crumbled feta cheese on top.
Serve and Enjoy
Chill in the refrigerator for 15 minutes to allow the flavors to meld. Serve cold or at room temperature.
