A Flavor-Packed, Flexitarian Twist on a Classic Burger – Lightly Fried, Oven-Finished, and Drizzled with Sweet Heat!

I've really been into mushrooms as a meat replacement, and this Blue Oyster Mushroom Burger is my new favorite! Inspired by some of my favorite plant-based IG creators @turnipvegan, @plantcrazii, and @jensplantbase, I crafted this crispy, juicy, and flavor-packed mushroom burger with a light fry and oven-finish for that perfect bite.

This is my Flex version of a healthy, mostly plant-based meal—I used eggs and goat cheese, but they are totally optional and can be replaced with plant-based alternatives!
I also made extra crispy mushrooms just to dip in my homemade Spicy Hot Honey Vegan Mayo Sauce because they were too good not to eat on their own! 🤤

Recipe: Crispy Blue Oyster Mushroom Burger
Makes about 3 crispy mushroom clusters (1 for a burger, 2 for snacking!)
Ingredients:
For the Mushroom Clusters
8 oz thick blue oyster mushroom cluster
1 egg yolk + 1 egg white (or plant-based egg replacer)
¼ cup all-purpose flour
¼ cup breadcrumbs
½ tsp umami seasoning
½ tsp garlic powder
½ tsp Old Bay seasoning
½ tsp smoked paprika
½ tsp garlic herb seasoning
Salt & pepper to taste
1 tbsp avocado oil (for frying)
For the Burger Assembly
1 brioche bun (or whole grain/vegan bun)
Herb lettuce & romaine
2 slices of tomato
1 slice of goat cheese (or plant-based cheese alternative)

Spicy Hot Honey Vegan Mayo Sauce
½ cup vegan mayo
20g hot honey (or maple syrup + cayenne for a vegan option)
¾ tsp smoked paprika
½ tsp cayenne pepper (adjust to taste)
¾ tsp garlic powder
½ tsp apple cider vinegar
¼ tsp sea salt
¾ tsp Dijon mustard (optional, for depth of flavor)
Instructions:
1️⃣ Prepare the Mushrooms:
In a bowl, whisk egg yolk and egg white (or vegan alternative).
In a separate dish, mix flour, breadcrumbs, umami seasoning, garlic powder, Old Bay, smoked paprika, garlic herb seasoning, salt, and pepper.
2️⃣ Coat the Mushrooms:
Dip the blue oyster mushroom cluster into the egg mixture, then dredge it in the flour mixture until fully coated.
3️⃣ Light Fry & Oven Bake:
Heat avocado oil in a pan over medium heat.
Fry each side of the mushroom cluster for 2-3 minutes, pressing down slightly with a spatula.
Remove and pat dry with a paper towel.
Place in a 400°F toaster oven for 15-20 minutes, flipping halfway.
4️⃣ Make the Sauce:
In a bowl, mix vegan mayo, hot honey, smoked paprika, cayenne, garlic powder, apple cider vinegar, salt, and Dijon mustard until smooth.
5️⃣ Assemble the Burger:
Toast the brioche bun.
Layer with herb lettuce, romaine, tomato slices, and the crispy mushroom cluster.
Melt goat cheese on top (if using).
Drizzle with Spicy Hot Honey Vegan Mayo Sauce and serve!
Bonus Side: Breaded Avocado Fries
I served mine with crispy breaded avocado fries—a perfect crunchy side! Just dip avocado slices in egg (or plant-based alternative), coat in seasoned breadcrumbs, and bake at 400°F for 12-15 minutes.
