Decadent Raw Chocolate Mousse Cake: A Guilt-Free Dessert Delight

Chocolate Mousse Cake

If you’re anything like me, finding that sweet spot where dessert feels like a treat without the guilt trip is a culinary quest. Let me share with you a creation that's close to my heart, a recipe I've tweaked and perfected over the years: my Raw Chocolate Mousse Cake. This isn’t just any dessert; it’s a journey, a labor of love, and it has a special place in my kitchen—and, quite frankly, in the hearts of anyone who’s had a slice.

Chocolate Mousse Cake Recipe:

Crust Ingredients:

  • 1 1/2 to 2 cups of raw nuts (I love using a mix of Brazil nuts and almonds)

  • 1/3 cup of organic shredded dried coconut

  • 1 cup of pitted dates

  • 1 tsp of ground cinnamon

  • 1 tsp of organic, non-alcoholic vanilla extract

  • A pinch of pink Himalayan salt

  • A drizzle of raw agave

Crust Preparation:

  1. Lightly grease a cake pan with coconut oil.

  2. In a food processor, ground the nuts until crumbly.

  3. Add the dates, cinnamon, vanilla extract, salt, and drizzle with agave. Process until the mixture becomes sticky.

  4. Press the mixture firmly into the bottom of the prepared pan. Freeze until the filling is ready.

Filling Ingredients:

  • 6 ripe avocados, peeled and stoned

  • 2 large, ripe bananas, peeled and chopped

  • 1 1/2 cups of raw cacao powder

  • 3/4 to 1 cup of raw agave (adjust to taste)

  • 1 1/2 tsp of organic, non-alcoholic vanilla extract

  • 1 tsp of ground cinnamon

  • A pinch of pink Himalayan salt

  • 6 drops of chocolate-flavored SweetLeaf Liquid Stevia (adjust to taste)

  • 1/4 to 1/3 cup of coconut water (adjust for consistency)

  • 1 1/2 to 2 Tbsp of melted coconut oil

Filling Preparation:

  1. Blend avocados and bananas in a food processor until creamy.

  2. Add the cacao powder, agave, vanilla extract, cinnamon, salt, and stevia. Blend until smooth.

  3. Slowly add coconut water to achieve desired consistency. Blend in the melted coconut oil.

  4. Pour the filling over the crust, smoothing out the top to keep it fluffy.

  5. Freeze for 1 to 2 hours until set. For a softer texture, thaw slightly before serving.
