Hey there, foodies! Today, I'm sharing one of my favorite recipes: homemade chickpea tofu sausages. They're packed with flavor, wholesome ingredients, and are incredibly versatile. Plus, they're super easy to make! Here's the recipe:


Chickpea Tofu Sausages Recipe:

Ingredients:

  • 1 6-oz package of chickpea tofu, drained, patted dry, and shredded into fine pieces

  • Old Bay seasoning

  • Sea salt

  • Pepper

  • Poultry seasoning

  • Garlic (because garlic makes everything better, right?)

  • Fresh parsley, chopped

  • Coconut aminos (for that savory umami kick)

  • A little dabble of avocado oil (for that perfect golden brown crispiness)


Instructions:

  1. In a mixing bowl, combine the shredded chickpea tofu with all the seasonings and herbs.

  2. Give it a light mix to ensure that every piece of tofu gets coated in those delicious flavors.

  3. Cook the seasoned tofu in a frying pan over medium heat, stirring often, until it's beautifully browned and sticking together.

  4. Once cooked, remove it from the pan and let it cool for a bit.

  5. Now comes the fun part - shaping the sausages! Using your hands, grab a handful of the seasoned tofu mixture and mold it into the shape of a sausage.

  6. You can either roll the sausages in rice paper for a lighter option or coat them in light Italian breadcrumbs for that extra crunch.

  7. Pop them in the fridge to chill while you prepare the rest of your meal.



Cooking and Serving:

  1. Heat a little avocado oil in a pan over medium heat.

  2. Add the chilled sausages and cook until they're nicely browned on both sides, about 5 minutes per side.

  3. If you prefer, you can also reheat them in the oven for that perfect crispiness.


Serving Suggestions:

I love serving these chickpea tofu sausages with a side of sautéed yellow squash, zucchini, and mushrooms. Simply sauté them in plant butter and garlic until they're tender and flavorful. And to complete the meal, how about some buttery noodles on the side? It's a feast fit for any occasion!
