Almond Chocolate Goodness Cookies Recipe:

Ingredients:

  • 1 cup raw oats

  • 1 cup raw almond meal

  • ¾ cup raw hazelnuts

  • 1 tablespoon raw vanilla bean powder

  • ¼ cup raw cacao powder

  • ¼ cup raw carob powder

  • 3 tablespoons raw mesquite powder

  • ½ tablespoon pink Himalayan salt

  • 2 teaspoons ground cinnamon

  • 3 tablespoons raw almond butter

  • ½ tablespoon organic, non-alcoholic vanilla extract

  • ¼ cup agave nectar

  • 1 ½ cups tightly packed, pitted dates

  • 3 tablespoons raw coconut butter

  • 3 tablespoons dried shredded coconut

Preparation:

  1. In a food processor, combine all the dry ingredients except the shredded coconut. Pulse until they form a crumbly, flour-like texture.

  2. Add the pitted dates, vanilla extract, almond butter, and agave nectar to the mixture. Continue to process until the ingredients are thoroughly combined, and the mixture takes on a dough-like consistency.

  3. Finally, add the shredded coconut and pulse until it is evenly incorporated into the dough.

  4. Shape the mixture into cookie shapes and store them in the refrigerator to set.
