Almond Chocolate Chip Ice-Box Cookies | A Mostly Plant-Based, No-Bake Treat for Every Sweet Tooth!

One of the great things about a mostly plant-based flexitarian lifestyle is the ability to enjoy delicious treats that nourish the body while satisfying your sweet tooth. These Almond Chocolate Chip Ice-Box Cookies are a healthier alternative to traditional cookies, made with simple, whole-food ingredients and naturally sweetened without refined sugar.
Although I no longer follow a strict raw food diet, I still incorporate many of the protocols I learned from my years as a raw foodist. I believe that occasionally enjoying mostly raw, plant-based meals and snacks is a great way to refresh the body, boost energy, and enjoy the benefits of nutrient-dense foods.
These cookies are a perfect example of how you can indulge without compromising your health. They’re rich, chewy, and chocolatey, with a texture that’s somewhere between a soft biscotti and a classic chocolate chip cookie. Plus, they’re naturally gluten-free, dairy-free, and packed with wholesome ingredients.
Let’s dive into the recipe, health benefits of key ingredients, and some fun ways to enjoy these cookies!
