One of the great things about a mostly plant-based flexitarian lifestyle is the ability to enjoy delicious treats that nourish the body while satisfying your sweet tooth. These Almond Chocolate Chip Ice-Box Cookies are a healthier alternative to traditional cookies, made with simple, whole-food ingredients and naturally sweetened without refined sugar.


Although I no longer follow a strict raw food diet, I still incorporate many of the protocols I learned from my years as a raw foodist. Plus, they’re naturally gluten-free, dairy-free, and packed with wholesome ingredients.

Recipe: Almond Chocolate Chip Ice-Box Cookies

Ingredients:
  • 1 cup walnuts (ground to a powder)

  • 1 cup well-packed pitted dates

  • 1 cup almond flour

  • 1 tbsp organic, non-alcoholic vanilla extract

  • ¼ – 1/3 cup coconut palm sugar

  • ¼ cup agave


Additional Mix-ins:
  • ½ cup almond flour (for added structure)

  • ⅓ cup cacao nibs

  • ⅓ cup mini non-dairy chocolate chips


Preparation Instructions:

1️⃣ Blend the Base:

  • Place the walnuts, dates, almond flour, vanilla extract, coconut palm sugar, and agave into a food processor.

  • Process until well combined into a sticky, dough-like consistency.

2️⃣ Mix in the Chocolate & Extra Flour:

  • Transfer the dough into a large mixing bowl.

  • Add ½ cup almond flour, cacao nibs, and non-dairy chocolate chips.

  • Roll or knead the mixture until everything is well combined.

3️⃣ Shape & Chill:

  • Form the dough into a log shape.

  • Wrap in plastic wrap (or parchment paper for a more eco-friendly option) and place in the freezer for 2-4 hours, or until firm.

4️⃣ Slice & Dehydrate:

  • Once firm, remove from the freezer and unwrap.

  • Slice into equal-sized rounds (about ¼ inch thick).

  • Place the cookies on a dehydrator tray and dry at 115°F for 10+ hours, or until they reach your desired level of dryness.

5️⃣ Store & Enjoy:

  • Store in an airtight container in the refrigerator for up to two weeks.
