Simple Pleasures: No-Bake Almond Cacao Energy Bars

Inspired by a breathtaking hike in the Superstition Wilderness, I crafted these No-Bake Almond Cacao Energy Bars to capture the essence of adventure in a delicious, energizing snack. Perfect for satisfying that chocolate craving with a hint of nutty, buttery flavor, these bars are a testament to the beauty and inspiration of nature.


No-Bake Almond Cacao Energy Bars Recipe:

Ingredients:

  • 1 cup almond meal

  • 1/2 cup raw cacao powder

  • 3/4 cup sunflower butter

  • 1 cup Medjool dates (about 10-12), pitted and soaked

  • 1/4 cup cane sugar

  • 1 tsp cinnamon

  • 1/2 tsp nutmeg

  • 1/4 tsp salt (optional)


Instructions:

  1. Prepare Dates: Blend the soaked and drained Medjool dates in a food processor until smooth.

  2. Mix Dry Ingredients: In a large bowl, mix almond meal, raw cacao powder, cane sugar, cinnamon, nutmeg, and salt.

  3. Combine Ingredients: Add date paste and sunflower butter to the dry ingredients, mixing until you achieve a uniform, sticky dough.

  4. Press and Set: Press the mixture into an 8x8 inch pan lined with parchment paper and refrigerate for 1-2 hours.

  5. Cut and Serve: Remove the chilled mixture, cut into bars, and enjoy!
